Happy Pancakes


I love making these pancakes for my kids, not only are they healthy but they taste great so they disappear fast, and that makes everyone happy.

All I do is take my regular pancake mix, I prefer whole grain but whatever you already have will work, and instead of adding water I add eggs and applesauce. Every mix is a little different so you might need to experiment a bit to get it perfect but I've found that if you add two eggs and enough applesauce to make a somewhat thick batter to about 1 1/2 cups of pancake mix you end up with a perfect pancake. The best part for me is that since these pancakes taste so good by themselves there is no need for syrup which means no sticky fingers or sugar highs, because of the eggs and applesauce they are a good source of protein and fiber as well. I do like to make happy faces on them with writing icing because my DS gets such a kick out of it and there's no need to feel guilty because it's nothing compared to the amount of syrup I usually see poured over pancakes.

You can also add other pureed or mashed fruits and veggies, like bananas, pumpkin, carrots, etc. and I love to add plenty of spices to them like cinnamon, nutmeg, ginger, cloves and allspice. YUMMY!!
